No need to chase rainbows—this pot of green chili goodness is your St. Patrick’s Day gold. We took our classic Six Gun Chili formula and gave it a fresh, zesty twist with tender chicken, smoky green chiles, and hearty black beans. It’s bright, bold, and just the right kind of wild.

Pile it high with all the green fixin’s—jalapeños, cilantro, scallions, and creamy avocado—and you’ve got yourself a chili that’s as festive as it is downright delicious.

What You’ll Need

- 1 package Six Gun Chipotle Chili Mixin’s
- 1 lb chicken (shredded rotisserie, or cooked and pulled chicken breasts/thighs)
- 1 cup water
- 1 (14.5 oz) can diced tomatoes (juice ‘n all)
- 1–2 (4 oz) cans diced green chiles
- 1 (15 oz) can black beans, drained and rinsed

For serving (go green):

- Sliced fresh jalapeños
- Chopped cilantro
- Sliced green onions (scallions)
- Diced avocado

How to Make It

1. Wake up the flavor
Add the large brown pouch of Mixin’s to 1 cup water. Stir it up and let it rest while you get things going.

2. Bring in the chicken
In a large pot or Dutch oven, add your cooked, shredded chicken and warm it over medium heat.

3. Tomatoes + green chiles = magic
Pour in the diced tomatoes (juice ‘n all) and the green chiles. Bring everything to a gentle boil.

4. Spice it up
Stir in your rested chili spice mixture, then add the black beans. Give it a good mix—we won’t tell Texas.

5. Turn up the heat (if you dare)
Add the small red pepper pouch if you like a little kick.

6. Let it simmer
Reduce heat and simmer uncovered for 30 minutes or more, stirring occasionally. Add water as needed until it hits that perfect “thick stew” consistency.

7. Thicken to your likin’
If you want it heartier, mix the masa flour pouch with a little water and stir it in.

Serve It Up
